We believe that to get the best from our food we should cook with the seasons and the produce we have available, locally farmed and from the wild. We use a nose-to-tail approach to ensure that as little as possible of the animal is wasted. Exceptional Quality

Saddlescombe farm bring exceptional quality mutton from just North of Brighton. Fin and farm, source fresh local fruit, vegetables and eggs straight from the farm to the kitchen. Forager search the fields and hedgerows to supply wild plants, mushrooms and fruits from the hedgerows and our fish is landed either at Shoreham or Newhaven.

At the Chimney House expect a modern twist on old classics highlighting the forgotten flavours of our hedgerows. Our Sunday roasts are popular with locals and visitors alike and The Chimney House continues to develop an exceptional reputation for its food.
